Grapes were whole bunch pressed in our pneumatic press on a champagne programme – very long and gentle pressing. 30% of the base wine was fermented in 3rd fill French oak barrels and allowed to go through malo-lactic fermentation, while the other 70% lay on the lees for 9 months before it was blended with the lightly wooded portion. After a controlled 2nd fermentation in the bottle to create the magical sparkle, an extended 26 month period of yeast contact to ensure maximum development.
Exceptional deep red color. Complex nose of white and black pepper spices with bramble and black fruit undertones. Vibrant acid level which carries through onto a multi-layered rich palate rounded off by smooth silky tannins. The integration of oak spice and tannin add depth and complexity. Superb fine dining wine.
The complex 2011 vintage shows a lively deep colour with aromas of plum, rose petals, black fruit and cinnamon sticks. Mature but soft tannin structure which gives a rounded yet complex palate. The fruit and character has integrated well with the oak that was used for ageing. An elegant vintage to remember.
This fruit driven Shiraz has a vibrant ruby red colour. On the nose there are aromas of rich blackcurrant and blackberry fruit with hints of black pepper. The medium palate has an elegant soft tannin structure with fine finesse. There is a gentle touch of oak on the nose and palate that compliments the wine.
Lovely aromas of melon and quince on the nose with hints of golden delicious apple. The full bodied, creamy palate is layered with flavours of peach and apricot and finishes with a lively acidity. Excellent ageing potential and superb versatility with a wide range of dishes completes this superb wine.
Upfront tropical flavours on the nose with litchi and peach aromas that follows through on the palate. These aromas are supported by hints of mango and a subtle touch of oak. A fresh presence of acid balances the residual sugar to perfection.
