PAUL RENE MCC BRUT is made from 100% chardonnay grapes that are handpicked in the early morning and then chilled overnight. Crate by crate they are passed into the press before the whole berries are crushed. This is only the beginning of a 3-year journey of detailed planning and careful attention to create a vintage of the PAUL RENE MCC BRUT.
The grapes for the PAUL RENé MCC BRUT ROSé were hand-picked from our vineyard in the Robertson Valley. Made from classic bubbly varieties (75% Pinot Noir and 25% Chardonnay), each bottle was fermented for 24 months on the lees at a consistent temperature of 14 degrees Celsius, before disgorgement.
The result: a lightly salmon coloured bubbly, refreshing in style and appearance with red, fruity flavours, floral undertones and sliky richness.
It pairs with seafood and white meats, and is ideal for a sundowner in summer.
Grapes were whole bunch pressed in our pneumatic press on a champagne programme – very long and gentle pressing. 30% of the base wine was fermented in 3rd fill French oak barrels and allowed to go through malo-lactic fermentation, while the other 70% lay on the lees for 9 months before it was blended with the lightly wooded portion. After a controlled 2nd fermentation in the bottle to create the magical sparkle, an extended 26 month period of yeast contact to ensure maximum development.

D’Aria Popsong Sauvignon Blanc Sparkling. A crisp dry, tropical style of Sauvignon Blanc bubbly, with hints of guava, melon, asparagus and gooseberry aromas and flavors. An accessible wine with good mouth feel and a lingering finish.
Boplaas Pinot Noir Brut Sparkling. A blushing cherry-pink coloured wine with a bouquet abounding with fresh strawberry, sweet raspberry, red cherry aromas and a hint of spice, which follow through on the crisp and refreshing palate with its fine, yet persistent bubble.
Stellenrust Clement de Lure MCC. Methode Cap Classique, from Chardonnay with a hint of Pinotage and aged for 24 months prior to degorgement. Slow-baked Granny Smith apples with hints of spice, lemon rind, peach and “leesy” aromas are backed up with a persistent mousse and vibrant acidity.
